Mother’s Day Blueberry Anise Pecan Biscotti

8 May

Dear mom,

There can’t be anything easy about being a mom. I say this not because I know first-hand what it’s like being a mom, but because I know my brothers and sister. Sorry mom, I wish I could help, but there really was nothing I could do.

It’s hard to say what the most rewarding part of motherhood could possibly be, since there are just so many options. The sleepless nights with a newborn, or the sleepless nights spent with a sick toddler? Or maybe the sleepless nights spent on school projects a little later on? Oh wait, it must be the sleepless nights spent wondering if your kid is adjusting well to college life away from home. I bet at that point you’re kinda wishing you hadn’t done quite so well on that school project that helped get them in to college now, huh? I thought so. Also, is it just me, or does it seem like motherhood is just a bunch of sleepless nights? I think caffeine was invented for mothers.

I feel like even Mother’s Day doesn’t allow you to catch up on the sleep debt you’ve been accruing for the better part of several decades. Not that you look a day over 29, mom! I’ll even let it slide now that you have 2, 30 year-old or over sons, that make that claim chronologically impossible. So many sleepless nights! Ya, I’ll let it slide.

I might be missing something here, but I’m almost certain your kids get the better end of the deal in this whole mothering thing. We get endless peanut butter and jelly sandwiches, hugs, and homework help, not to mention clothes to steal stolen clothes and home cooked food to take with us after the weekend. You always seem to be there for us kids when we need it most, even if that means taking a “vacation” to help move 4 kids from apartment to apartment, year after year, or “offering” guinea pig services for a new, untested recipe. I wouldn’t intentionally off you with biscotti, mom, that’d just be silly. I’ll be moving again soon.

Now, what do you get out of the deal? Again, I’m only a mother to an overly-opinionated cat with human-finger-length toes and the vocal cords of a screaming infant, so I’m just throwing things out there. I hope you feel like you occasionally receive a baked good that you really love and don’t just choke down and pretend to like, as mothers are known to do. I hope you feel like you get enough yard work, house-cleaning help, and excuses to go to places like Disneyland out of us. As far as I can tell, the only logical reason for having kids is an excuse to watch animated movies and to eat more birthday cake, so I hope you feel like you’ve gotten your share of those, too. But most of all, I hope you feel like you get back the unconditional love that you give. Every. Single. Day. Whether you like it or not!

I love you mom, thanks for everything you do! Happy Mother’s Day!
Love, Stacy

Recipe to come!

Again, if I could have saved you from those other children of yours, I would have. So instead, I hope you can choke down this biscotti 🙂
